When it’s too hot to cook, it helps to remember that cuisines around the world have faced the same problem and come up with cool solutions.

Whether it’s cold soups throughout Europe, beet salads in Russia or cold noodle dishes in Asian countries, beating the heat with a cool meal is almost universal. Summer rolls, the Vietnamese contribution to the world’s cold food, aren’t as complicated as they look. Creative cooks can put together enough of them for a family dinner without breaking a sweat.
